Fortified custard

Simple protein and nutrition boost at home

If you are looking for a simple, nourishing way to boost calories and protein, this fortified custard recipe is a practical solution for people with reduced appetite or anyone who needs extra nutrition without large portions.

Ingredients

2 tbsp Birds custard powder

2 tbsp sugar

4 tbsp skimmed milk powder

1 pint whole milk

Cake or pudding of choice

 

Recipe

Make fortified milk

Use the skimmed milk powder to make a fortified milk. See video above.

Make custard

Add 2 tbsp custard powder to your pan, together with 2 tbsp of sugar.

Add milk

Add a small amount of milk and stir to make a paste. Once there are no lumps, gradually mix in the remaining milk.

Heating

Gently heat up the custard until it thickens nicely. Stir it a spoon or whisk. Try not to let it boil because that can compromise the quality of the protein.

Finished custard

Once the custard is smooth and thick, pour it over your chosen cake. Any remaining custard can be stored in the fridge for up to 24 hours.

Caryn Straker

Caryn studied for a Bachelor of Science in Dietetics at the University of Stellenbosch in South Africa, qualifying in 1997. She has worked as a dietitian in both South Africa and the UK since 2000, gaining experience in hospitals, the community and private practice. Since 2013, she has focused her practice in care homes, using her expertise to enhance the well-being of residents. Here she supports placements for dietetic students from London Metropolitan University as well as regularly lecturing at University Collage London on both care home nutrition and nutrition in palliative care.
